Using Your Noodles

Making dinner every day can lead to boredom, but with a few key products in your larder you can throw together a quick meal easy and cheap. Over time we have developed a repertoire of go-to, meals. Saturday I threw together a family favorite, cold peanut sauce noodles with kimchee and bool kogi. I know it sounds foreign and complicated but it's not. Most of the ingredients are prepared and ready to go from Trader Joe's. I used a peanut sauce from the Asian aisle of the market and stylishly threw ingredients from my pantry on top.

In addition to the above I added green onion, basil, sesame seeds and chopped dry roasted peanuts.I had hoisin and sriacha on side to add more zing if needed. This dish will take on any leftovers you might have hanging around. I have used cucumbers, carrots, spicy sausage and pickled goodies, of all nature,  in past incarnations.

 The above picture uses TJ's dried spaghetti. I was unhappy with Saturday's photo of the rice noodles and used leftovers on Sunday lunch to get a better shot. In fact, I really liked the dried spaghetti better than the rice noodles. Sometimes stuff happens and you change your recipe. Also, I need to shout out to Creekside Bakery. Their apricot pastry gleamed like the sun and  called out to me 'I want to be your Sunday cheat treat!'

I like that you embellished the store-bought food with your own twists, and thereby made the dish more interesting.

I want to try the peanut sauce. Our Thai vendor has barbeque chicken that he serves a great peanut sauce on the side.

Chilebrown- This one is my favorite. TJ's has their own that is OK but this one has a bit more kick. I use it as a condiment next to the ketchup and BBQ sauce. I have made my own but like this better.
