Some Assembly Required


Salad of the Day

I've written before that my wife loves a "nice" salad. She can go to the cafe salad bar at her work and put one together for about $8. In the spirit of saving money and eating healthy I've discovered that for the same $8 I can make salads for her for seven days or more. I try to vary the ingredients so it doesn't get boring. Today I used spinach, cucumber, shredded carrots, beets and topped it with walnuts and cranberries. I pack the ingredients in reusable containers and she assembles them and adds the dressing at lunch time. For a while I have been packing the salads in an old canvas insulated bag with blue ice. A functional but not very stylish way to save money. While cruising the blogosphere I came across a beautiful and stylish alternative. The Sachi "lunchin ladies" zebra insulated lunch tote ($19.99). Not only does it look good but does an even better job of keeping things cold. I purchased hers from QVC who got it here fast and now are marketing me like crazy to buy more stuff.

When I was working, I was always shocked at the price of salads from a salad bar - a true disincentive to eat well. Your alternative sounds just right.

Zoomie- you worked in the city. Your salad would have been $12. The lunches are a creative outlet for me as well. I should blog more about them.

Such a cute bag! Great way to carry lunch to work.

I have pretty much given up on salads as of late, but think I might have to give one like yours a go this week...it sounds so good!
