Spring has sprung! We have a little backyard kitchen garden where we grow tomatoes, herbs and whatever vegetables that strike our fancy each year. Each spring we can count on a number of volunteer plants to pop up as rewards from previous gardens. This year we have three: Wild garlic, parsley and mint.

What to do with our crops? Well of course you start with cocktails. A mojito for sure! I had all the ingredients except for lime. Guess what? Meyer lemon is an excellent substitute.
Meyer lemon mojito
1 1/2 oz rum
2 oz simple syrup or sugar
juice of half meyer lemon
four large mint leaves crushed
ice
club soda
Place all ingredients except soda in cocktail shaker and shake it, baby!
Strain into highball glass with fresh ice, garnish with mint and lemon wedge
