A Rare Treat

Bacon and Fried Egg Sandwich

When I was young lad I lived on these things. On the way to work in the New England winter I would purchase a bacon and egg sandwich and hot coffee to go at the local diner. Once at work I would duck into a storage room and gorge myself on the hearty sandwich.
This make-at-home version of those sandwiches is fatty, lush and delicious! Fry apple-wood smoked bacon until almost crisp and place on a paper towel covered plate to rest while you prepare the egg. Use the freshest egg you own and fry it in the hot bacon drippings. The egg of desire is  crisp on the bottom and the yolk still runny. I baste the top of the egg with the drippings to firm it up a bit.  Place bacon on the buttered roll or toast and top with egg.

I think you may know what I am about to say. You need to make your own bacon. If Zoomie can do it, so can you. I even have some curing spice to start you off.
