April made my morning by whipping up a Florentine Frittata inspired by the Egg Beaters recipe website. She substituted regular Egg Beaters and added chopped spinach. Tomatoes where used in place of bell pepper. I ramped up my portion with some sour cream and Taco Bell hot sauce. This would make a great sandwich on a crusty bolillo roll.Florentine Frittata photo was taken in the dark of morning with iPhone.

Frittata is one of those dishes like quiche that you are not supposed to admit to liking. I love it.
