Breakfast on the Fly

Breakfast Bruschetta

What do you do with the semi-stale Ciabatta bread left on the counter last night? Observe ingredients available and improvise. That sounds so military but on a laid back Saturday of a three day weekend it is much more casual. I put slices of prosciutto on a parchment lined sheet pan into the oven set at 350 degrees and cooked until crisped. After I sliced the bread, I coated it with our homemade garlic oil and grilled both sides. Soft scrambled eggs in butter topped with some mozzarella cheese provide the cohesion for the ingredients. Top the bread with prosciutto, cheese eggs and tomato. For garnish and a wonderful aroma I placed Thai basil on top. Our Thai basil plant seems indestructible even in our recent heat wave. The best part....eat with gusto!

Oh, that picture was definitely taken in sunlight. Isn't summer nice all of a sudden? Good eating.

Can you believe it was that sunny at nine thirty in the morning? Probably should have sought shade but was enjoying soaking up summer. That and the fact that I was in a hurry to click and eat.
