No Muffins No Problem

I had promised to make breakfast sandwiches for brunch and had assembled all the ingredients, except I forgot the English Muffins! Instead of changing the menu or heading over to McDonald's I substituted fresh cooked waffles. The result was maybe even better than the original idea.

 The Sandwich Ingredients:
 Homemade waffles using The Joy of Cooking "pancake" recipe
 Apple wood smoked bacon
 Omelet made with Egg Beaters (small concession to cholesterol issues)
 Swiss-Gruyere shredded cheese from Trader Joe's

Possible Additions:
Maple syrup
Butter
Hot sauce (me)
In season ripe tomatoes

I would never have thought of that, and yet it's so elegantly simple! Great idea!

Zoomie- Thanks! I was concerned it would taste sweet but at first bite I was happy :)

Chilebrown- Truth be told... we baked up a bunch of extra waffles and froze them. I have been stuffing my pie-hole with waffles,syrup and butter!

OMG, I'm having this tomorrow. Cranky and I have been squabbling about what kind of buns for egg and ham sandwich. This is it! Big, fat merci.
