My daughter sent me recipe for slow cooker pork loin. Certainly that should read pork butt or pork shoulder. 'It's not going to work,' my instinct told me. Slow cooked pork loin would be dry. I've made it twice now. It tastes great and is not dry at all. Here's the recipe from Skinnytaste.com a website dedicated to low fat recipes.The only thing I did different from the recipe was use apple cider vinegar, because I don't stock red wine vinegar. Also, I did not have liquid smoke so I threw in a tablespoon of BBQ sauce. I used the pork to create an open face sandwich. I topped it with finely grated Tillamook sharp cheddar, BBQ sauce, slaw and pickled red onion. Will this recipe make me skinny? Some how I doubt it.

Chilebrown- Pickled red onions are easy money. I started with Rick Bayless method that just blanches them and adds lime juice and salt.
