Every year Avril plants a small garden in our backyard. In limited room she produces a beautiful array of goodies. Even though it is a lot of work she seems to find joy and beauty.
Avril's Garden
This year one of the biggest producers is the Zephyr Squash. Like its cousin zucchini, it seems to grow from thumb size to baseball bat size overnight. It tastes even better than normal zucchini and is very lovely with it's green and yellow exterior.
Zephyr Squash
In order to use up some of the bounty I concocted a special vegetarian sandwich. I named it the Grilled Provolone and Zephyr Squash Sandwich with Onions Three Ways (grilled white onion, pickled red onion and French's French Fried Onions.) A little balsamic reduction drizzle adds a sweet tang.

Lovely, just lovely. I saw squash used another intriguing way at the Lark Creek Inn yesterday. They had shaved the squash lengthwise with a veggie peeler (when the squash were small) and served very thinly and raw as a salad. There was no dressing on theirs, but I think it would have been improved by having some dressing on it. I'll be interested to see what you come up with.
Zoomie- I have been using the tiny squash on Avril's daily salad. They are really sweet. I would think the would use a dressing. I seen them shaved and called a carpaccio.
Onions three ways? I'm sold. This sounds amazing. Where were you when I was still a vegetarian? LOL
yesteryum- Thanks for stopping by. I am so far from vegetarian but this sandwich fit the bill. I bet some grilled ham would fit right on there. :)
